I was going to write a completely different post today, but it's Friday and it's been a full on week involving lots of driving long distances for me so I've decided to make Banana Bread instead.

I have a new Coconut Banana Bread recipe I want to share with you and this can even pass on the 28 Day Mind & Body Reset. So if you're Resetting with me at the moment, lets make this! Just make sure you share it with friends, colleagues, kids, husbands, boyfriends, girlfriends so you don't eat the whole loaf in one sitting, which I TOTALLY could do! You can also slice it up and freeze, taking out one slice at a time. Really yummy with some almond butter!

This recipe is grain free, because I have been avoiding grains as much as possible lately. I find them inflammatory for my autoimmune condition so experimenting with not having them at all. Once you remove something from your diet, it's so interesting to notice what happens when you slip up, because I like everyone else do slip up every now and again. I had some white rice recently when I was at a restaurant and afterwards, had the biggest energy slump I've had in a very long time. I think sometimes, the best thing to do is to slip up. When we have the things we are avoiding it acts as a reminder as to why we're doing it in the first place. Learning to listen to our body's signals is possibly one of the most powerful tools we already possess. And here's the thing... when I suggest to people to remove certain foods from their diet it's not because I consider foods to be bad, because natural whole foods are never bad, however what the food industry and its marketing campaigns are doing to our food is definitely not good. 

But this Banana Bread is! 😉

Coconut Banana Bread

  • 3 ripe bananas + 1 for decoration optional
  • 5 eggs
  • 1 cup ground almonds
  • 1/2 cup coconut flour
  • 1/2 tsp vanilla bean paste
  • 1/2 tsp GF baking powder
  • 1tsp cinnamon
  • pinch of sea salt
  • 2 tbsp melted coconut oil
  • add-ins of your choice - walnuts / pecans / blueberries / cacao nibs
  • 1 tbsp maple syrup - optional

Blitz all ingredients in a food processor. Transfer mixture into a loaf tin lined with parchement paper and bake in the over on gas mark 6 (200 degrees Celcius) for 30-35 minutes. Poke a knife in the middle to check it's cooked through.
