Happy Valentine’s day love birds! Need some last minute inspiration for Valentine’s Day dessert?

You and your date are going to love this delicious creamy dessert which, of course, is super healthy too. Oh and did I mention quick and easy? You’re going to get an all round delicious, nutritious, well balanced dessert; bursting full of vitamins, minerals, antioxidants, probiotics, healthy fats and protein! We’re not going to mess around today, let’s tuck in!

Coconut Yoghurt Parfait

You’ll need:

  • A big pot of coconut yoghurt
  • Handful each of flaked almonds, pumpkin seeds, pine nuts, sunflower seeds, flaxseeds, flaked coconut
  • 1 cup pomegranate seeds

Begin by toasting the nuts and seeds in a dry pan over a medium heat. When golden, set aside and allow to cool. Grab two tumbler glasses and  start layering your dessert. Start with some nuts and seeds, then add some coconut yoghurt, pomegranate seeds, and repeat until the glass is fully stacked. Enjoy with your loved one!
