I’ve been watching everyone around me scoffing Mince Pies for the last couple of weeks now… drooling and wishing I could have one.. so it’s about time I made my own! Eating Mince Pies is the only way to properly get into the spirit of Christmas, don’t you agree?

I am so excited to share this recipe for gluten free, vegan mince pies with you, because I honestly wasn’t sure I could create a recipe for healthy mince pies that is BOTH gluten and dairy free, that would actually work. And it worked!!! The pastry is perfect and crumbly but holds together nicely even as you eat them. I made my own filling as well which is just so easy to make and totally addictive and delicious. I’ve got some left over which will be really nice as a topping for porridge or with some coconut yoghurt.

Gluten Free, Vegan Mince Pies

For the pastry:

60g coconut oil, plus extra for greasing
25g coconut sugar
75g ground almonds
50g gram (chickpea) flour
50g rice flour
2 tbsp water

For the mince meat:

4 dried apricots, finely chopped
4 dates, finely chopped
2 tbsp golden sultanas (can use any kind of raisins)
1 apple, cored and roughly chopped into small pieces
1 heaped tsp marmalade
1/2 lemon, juice of
2 clementines, juice of
1 tsp mixed spice
1/2 tsp cinnamon
You can also add dried cranberries and chopped nuts if you like.

To make the mincemeat, add all the ingredients to a pan and cook on low heat, stirring regularly until the juice is absorbed and the fruit has become all sticky. Around 15-20 min. Set aside and allow to cool.

To make the pie crust, preheat the oven to 180C/350F/gas mark 4. Lightly grease the hollows of a 6-piece tart tin/fairy cake tin (muffin tins are too big) with coconut oil.

Place the coconut oil and coconut sugar into a food processor and cream together. Then add all the dry ingredients and mix well to form a dough. Slowly add the water so that the dough comes together. Roll it out and cut 6 circles with a cookie cutter and 6 heart or star shapes for the lids. Gluten-free pastry is delicate and quite crumbly but just keep bringing it together and rolling it out.

Spoon 1-2 tsp mincemeat into each pie. Put a dough lid on top of each one.

Bake for 15-18 minutes until the pastry has browned. Leave the pies in the tin until cool. Ease a butter knife around the edge of each pie before tipping out. Dust with icing sugar.
