This amazing refreshing Green Gazpacho soup is my take on the classic chilled Spanish soup but instead of being red mine is mean and green!

I love having a smoothie for breakfast, but as the weather starts to turn colder, the mornings for me are more about a warm breakfast such as a quinoa porridge or eggs with buckwheat toast. If I’ve had a big breakfast it’s quite nice to balance it out and have something light and refreshing at lunchtime. So here’s my answer to a lunchtime savoury  soup / smoothie. Absolutely packed with amazing fresh zingy ingredients to fill you up and give you a lovely boost in the middle of the day.

Cucumber and celery to cleanse and hydrate, dark green leafy veg high in magnesium and folate for healthy blood and bones, avocado for good healthy fats, hemp oil providing omega 3 fatty acids and lemon juice for a vitamin C boost. All together a super anti inflammatory bowl of goodness.

Not only is this chilled soup delicious and creamy but the colour is divine!! I like to sprinkle some seeds on top for a little bit of crunch and they also provide me with a good dose of zinc, vitamin A and E, omega 6 and omega 3 fatty acids as well as protein.

Green Gazpacho Soup

Ingredients (serves1):
1 stalk celery
25cm piece cucumber
1/2 avocado
leafy veg of your choice: kale, romaine lettuce, spinach or a mix of all
handful of parsley
1/4 green chilli (optional)
juice of 1/2 lemon
1 tsp hemp oil

Topping:
sprinkle with pumpkin, sunflower and hemp seeds and pine kernels
