Fat Tuesday! 

Hastings truly celebrates Fat Tuesday with tons of music and laughs. It's the first of a huge line up of festivals that this town entertains us with, and just such a great time of year to celebrate, as spring begins to draw us out of the darkness. 

I've made these fun pancakes to share with you guys, inspired by the spring, so they're PINK!

Mostly, my usual pancake recipe, but with beetroot and savoury toppings today. Although, they're equally delicious with a dollop of coconut yoghurt and maple syrup. Hope you enjoy making them! 

Pink Pancakes with Cashew Mayo and Mushrooms

(makes approx 20-22 pancakes - serves 4-6)

For the pancake batter:

  • 3 bananas
  • 6 eggs
  • 1 small beetroot
  • 100g buckwheat flour
  • pinch of salt
  • coconut oil for frying
  • 1/4 cup coconut milk 

Begin by separating the egg yolks and egg whites.

Add the bananas, beetroot and egg yolks to a food processor and blend until a smooth consistency is reached. Then add the buckwheat flour and salt and blend. Transfer the mixture to a large mixing bowl.

In a separate bowl, whisk the egg whites till they become frothy, then fold into the pink mixture.

If the mixture is too thick add a splash of plant milk (I used coconut) for a pancake batter consistency.

Heat up a knob of coconut oil in a frying pan and ladle out dollops of the batter to fry. They are super fluffy and delicious! 

For the cashew mayo:

  • 1 cup cashews
  • 1 clove garlic
  • 2inch piece of fresh turmeric
  • juice of 1 lemon
  • pinch of salt

Soak the cashews in water either overnight (or to cheat, pour hot water over them and soak for 30-40min)

Add all the ingredients to a food processor and blend until a very smooth consistency is reached. Taste, adding more lemon juice or salt to taste.

For the mushrooms:

  • 250g mushrooms
  • dash of olive oil
  • pinch of thyme

Slice up the mushrooms, add to a baking tray, toss with some olive oil and thyme. Bake in the oven for 30min until well cooked.

To serve:

In my photos I've stacked lots of pancakes because I love the way it looks, but in reality, to serve, add 2-3 pancakes to you plate, dollop some cashew mayo, add some mushrooms and some thinly sliced red onions and tuck in!
