Happy Monday all! The sun is shining here in Blighty today, it’s a good start to the week.  As a nice surprise for the kids when they arrived home from school all hot and bothered I though I’d make some nice ice lollies to cool them down.  Well not just for them, I love an ice lolly too!  These lollies are really easy to make, incredibly tasty and creamy, and no-one would ever guess that they’re super healthy too. It was pretty much a case of what’s in the house as is the case is with most of my food preparation… I had some bananas which are perfect to make the base and give the creaminess to all the lollies, and then I just added in some extra ingredients to make different flavours: mango, strawberry and bluberry-cacao.


Mango & Banana (makes 3 lollies in the moulds shown)
1 banana
1/2 mango
1/2 cup coconut milk

Strawberry & Banana (makes 3 lollies in the moulds shown)
1 banana
14 strawberries
1/2 cup coconut milk

Blueberry & Chocolate (makes 3 lollies in the moulds shown)
1 banana
75g blueberries (frozen or fresh)
1 tsp raw cacao
2tsp maple syrup
1/2 cup coconut milk

We’re essentially making a thick smoothie, so prepare each flavour separately by placing all ingredients in a blender. Wizz them up and pour into moulds.  Freeze for 5-6 hours.
