I’ve got a delicious weekend treat to share with you today. Also known as Nice Cream, this dairy free, sugar free ice cream is so easy to make and totally delicious! My kids love this and I love it because it helps keep their sugar intake to a minimum. Well… I love eating it too of course!

There are just 3 ingredients in this Nice Cream: bananas, almond butter and cinnamon. That’s it! It’s creamy, nutty and yummy!

Bananas contains a high concentration of dietary fibre, vitamin C, potassium, vitamin B-6 and antioxidant compounds, as well as both soluble and insoluble fibre. Insoluble fibre is not broken down during digestion, instead it becomes food for our gut bacteria, promoting digestive system health. Fibre-rich foods like bananas also help hormone metabolism, cardiovascular health, prevent obesity and hypertension. Vitamin B-6 aids in energy metabolism and the synthesis of crucial neurotransmitters and hormones like serotonin and melatonin, beneficial for depression and heart disease. Potassium is a mineral and an electrolyte required for the development and maintenance of strong bones and teeth. Along with sodium, potassium helps regulate the cellular membrane potential that allows muscles to contract and neurons to transmit electrical impulses. Benefits include prevention of kidney stones, high blood pressure, osteoporosis and strokes.

Almonds are rich in vitamin E, an antioxidant beneficial for nourishing the skin and reducing the signs of ageing as well as cardiovascular health. The mono unsaturated fatty acids (MUFAs) found in almonds help balance blood sugar levels by slowing down the rate at which sugar is released into the blood stream. Almonds are also rich in fibre, plant proteins, magnesium, calcium and iron.

Cinnamon has many health benefits, including being rich in polyphenol antioxidants with anti-inflammatory properties. Cinnamon has been found to improve insulin sensitivity, lower cholesterol and reduce blood pressure. It also has anti fungal and anti bacterial properties, making it an absolutely amazing spice!

Nutty Banana Nice Cream

3 ripe bananas
2 tbsp almond butter
1/2 tbsp cinnamon
Topping (optional): crushed almonds and more cinnamon

Whenever I have ripe bananas in the fruit bowl I chop them up and place them in a zip lock bag in the freezer. For this recipe you will need to freeze the bananas over night at least.

Place your frozen banana pieces, almond butter and cinnamon in a food processor and mix until well combined and smooth.

Serve immediately (makes approx 4 portions), this needs to be eaten straight away as re-freezing does not work well. Top with some crushed almonds and a sprinkle of cinnamon.
