I love the change of seasons and in particular autumn time. Warm sunny days and the leaves turning all shades of reds and yellows, is just beautiful! It makes me smile and be thankful to be alive here on this beautiful planet. A glut of apples is upon us at this time of year and so I see it fitting to add apples to everything. Juices, savoury dishes and these scrumptious spiced apple muffins. Entirely gluten and dairy free, and soooo delicious!

The humble apple is often forgotten for the super food it truly is. High in fibre for digestive and heart health. Rich in antioxidants which promote cellular health and help reduce inflammation. This recipe is also high protein which is obtained from the eggs and ground almonds making this a healthier sweet treat which won’t spike your blood sugar levels. It also includes cinnamon, renowned for its blood sugar balancing properties.

 

Spiced Apple Muffins

250g (2.5 cups) ground almonds
1tsp baking powder
2 apples, grated
1 apple for decoration
3/4 cups honey or maple syrup
1tsp cinnamon
1/4tsp allspice
1/4tsp nutmeg
pinch salt
1tsp pure vanilla essence
4 eggs
1tbsp coconut oil or EVOO

In a large bowl, mix wet ingredients: eggs, vanilla, honey, coconut oil. Start by whisking the eggs until they’re fluffy then combine well with other wet ingredients.
Mix dry ingredients together in a smaller bowl – ground almonds, baking powder, spices, salt. Now slowly add the dry ingredients to the wet ingredients. You might need to use your hands to bring the mixture together and mix it well.
Either cook as entire cake or split between 12 cup cake moulds.
Bake in the oven on 160degreesC for 40 min as cake, 20 – 25 minutes as cupcakes.
