Hello folks! Today I want to share this super quick and extremely simple two-ingredient sugar-free cookie recipe. As you may have noticed by now, I love a quick and simple recipe! These little beauties are good for breakfast, they go very nicely with a matcha latte or to give to the kids as an after school snack.

Literally TWO ingredients and completely SUGAR FREE: Bananas and Gluten Free Rolled Oats. You can get fancy shmancy and add other things like raisins, coconut chips or cacao nibs, you may even want to add a dash of maple syrup but you really don’t need to, they are great just as they are. Perfect when they’re still warm straight out of the oven! Perfect gooey cookie like consistency, with a crunchy top, they don’t last long around here at all. 

When I first changed my diet and lifestyle in order to heal myself from rheumatoid arthritis symptoms, I found I was having symptoms even with the gluten free oats. So do be careful with oats if you have a gluten intolerance as oats do contain their own protein in the form of avenin which can have similar effects as gluten on some individuals. I do love oats though, so as I got better and my vitality restored, I cautiously introduced them in small amounts and only occasionally. As they are such a fantastic food, and now that I can tolerate them, I like to incorporate Gluten Free Oats in my diet 2-3 times per week. They are rich in many minerals such as iron, magnesium, selenium and zinc, insoluble fibre which helps lower cholesterol and is great for our digestive system, as well as lignans which are beneficial in hormone balancing.


Bananas, what can I say, one of my favourite things when it comes to a treat, whether I’m making nice cream or banana cake or well… these cookies. What an awesome food with a wonderful array of nutrients such as potassium, Vitamin B6, Vitamin C, manganese, magnesium and folate. Quite high in naturally occuring sugars though so make sure to always eat them with some protein to slow down the release of sugar into the blood stream {protein such as the oats in this recipe or a handful of nuts}.



Sugar-Free Cookie Recipe

2 medium bananas
3/4 cup / 105g Gluten Free Rolled Oats

Toppings {optional}:
cacao nibs, desicatted coconut, raisins

Preheat the oven to gas mark 4 / 180C. Peal the bananas and mash well with a fork. Mix in the oats. As all bananas are not the same, you can add the oats slowly to make sure you end up with a nice dough like consistency, not too wet and not too dry. Equally add more oats if needed. Once you have the perfect cookie dough like consistency, use a table spoon to scoop onto a baking tray. I got 9 cookies out of my mixture.

If you fancy adding some toppings now’s the time to sprinkle them on top. Today I made 3 with cacao nibs, 3 with desiccated coconut and 3 with raisins. Place the baking tray in the middle of the oven and bake for 15-20 min until golden brown. Remove from the oven, let cool for a couple of minutes and tuck in!
