I had been following Nicky on Instagram for a while, enjoying all her lovely recipes and the nutrition tips she shares.  So I was delighted when she agreed to be part of this project, it was just an absolute pleasure to visit her at her home and get to meet her in real life for this photoshoot and interview.

Nicky shares her delicious gluten free Raspberry Chocolate Brownies with us.

“I was trying to find a recipe to make something for my son’s birthday.  But even the healthy cake recipes had a lot of sugar in them.  Even if it’s natural sugar, it’s still sugar and should be kept to a healthy minimum.  So I came up with this recipe, it’s made with just 1/2 a cup of maple syrup and uses protein flours and fat to help balance blood sugar.  Balancing blood sugar is important to keep energy levels steady and can also help prevent weight gain and mood swings (to name only a few benefits!).  With the added bonus of the lovely raspberries which are packed full of antioxidants.

I love this recipe and it was a hit with the kids too!”

RASPBERRY CHOCOLATE BROWNIES
For Balanced Blood Sugar Levels

1 cup of quinoa flour
1 cup of almond flour
1 cup of raw cacao
1 tsp of Xanthan gum
1.5 tsp of baking powder
A pinch of sea salt
1/2 cup of maple syrup
1 tablespoon of pure vanilla extra
2 teaspoons of vanilla powder
1/2 cup of olive oil
1 cup of almond milk
2 eggs
2 cups of raspberries (you can use frozen)

Preheat your fan oven to 180°C

Line a baking tray with baking paper

Sieve the flour, cacao powder, xanthan gum and baking powder into a bowl and add a pinch of sea salt

Combine all the wet ingredients

Slowly combine the wet and dry ingredients, and the raspberries.  Don’t overwork it, it’ll become a bit too gloopy if you do.

Pop into the baking tray and bake in the oven for around 20-25 minutes, keep an eye on it as you want it to be nice and moist in the middle still – it’ll be nice and sticky.
