January, for most is a quiet month, a month for winter walks with friends, a great time to hunker down and spend cozy evenings by the fire, to wrap up in warm jumpers and warm up with hot soups and stews. This is a great time for making new plans, for eating healthily, for changing up old habits and for getting the creative juices flowing.

Creativity comes in many shapes and sizes and I personally find a great sense of creativity in my kitchen. One of my favourite ways to cook is to find a bunch of ingredients and make a delicious meal out of them. If this was a superpower, this would be my superpower! I love making tasty meals out of what looks like nothing; when the fridge and cupboards look empty, I can always rustle something up! 

And today is just this kind of day. I've been for a lovely sunny wintery walk and now a delicious soup for lunch is in order! I haven't been shopping specifically to get any ingredients, I'm just seeing what I can make with what I've got...

I hate food waste so bringing creativity to the kitchen is a great way to avoid this. Look in your fridge and cupboards and you are sure to find ingredients for making a delicious hot steamy soup! Including plenty of garlic and greens in our diet at this time of year is brilliant for boosting the immune system to prevent us catching colds, so lets see what I've got lurking in the fridge!

I've got some carrots, onions, garlic, ginger, always have plenty of turmeric in, yellow split peas and some spinach which to me equals divine, healthy, comforting soup! 

Yellow split peas, carrot and spinach soup

  • 3 carrots, chopped into small pieces
  • 1 onion, finely chopped
  • 3 cloves of garlic, finely chopped
  • an inch piece of ginger, grated
  • 1 cup of yellow split peas (dahl), soaked for 2-3 hours
  • 2tsp turmeric
  • 1tsp cumin powder
  • 1 tbsp olive oil
  • 2 big handfuls of spinach, chopped
  • 1 organic veg stock cube
  • sea salt + pepper to taste

Begin by gently cooking the onion in some olive oil, then add the ginger, carrots and split peas and stir through. Add the garlic, cumin and turmeric and stir. Now cover with water and add a veg stock cube, bring to the boil, then simmer.

When the split peas are cooked well (after about an hour), add the spinach and cook till wilted. Add salt and pepper to taste.
